good cheeses? i'm curious, and loved this holland-smoked gouda that i had this weekend.

i have always loved goat cheese, i like pecorino, havarti, brie, fetta... maybe i should stop by a local shop and broaden my taste.

Have you had Humboldt Fog goat cheese? That is one of my absolute faves, talk about white gold! I like pecorino too. It's especially good baked, with a drizzle of vanilla bean'd honey on top. Give manchego a try too. That one's pretty accessible for people getting into cheese, and it's delicious with quince paste or candied figs, dates, etc. On a related note, Idiazabal is another good hard Spanish cheese. Like manchego, it's very snackable. Another possibility is a Scandinavian cheese ed Gjetost. It's a brown cheese with a sweet caramelized flavor, and it's delicious in thin slices on crispy rye cracker bread.

Matters of taste are so subjective. Hard to say I'd suggest finding out what -you- like by visiting cheese shops and tasting things if they're available for tasting. And anyone who cares to use this as a metaphor for bicurious posters....feel free.

holland does make good cheeses, I love cheese, Italian ------- Asiago Pecorino Romano Parmesan Fruilano -this is a soft cheese, similar to gouda Provolone Fontina Fresh hot Ricotta Swiss ----- Jarlsburg Emmental I also love blue cheese cheddar (pref. old or very old) cheddar curds (squeaks) (working in a deli awakened a love for cheeses that has never died)

good speedy cheese recipie ricotta cheese from the container poured into a bowl and mixed up with a scoop of powdered sugar (not too much) and a dash of amaretto. Dip in bland cookies, apple or firm peach slices. Ahh... yum. Two minute cheesy elegance.
